Below a certain temperature, grape plants will deposit almost all surplus energy as glucose or fructose into the grapes to hinder the formation of ice crystals inside the grapes, which causes damage and death.

When picked in this state, the grapes keep their original flavour while becoming much sweeter and more alcoholic.
